Cooking Lesson and Lunch

If you are in the Raleigh/Durham area and missed this cooking/lunch afternoon....Boy You missed out!  Sorry but I want to be honest with you.  I love a tasty lunch and this was way beyond that!
Sheri Castle is an amazing Chef, with some real great tips.  We got to listen, ask questions, and watch.  Then we got to eat!!!  OMG the food was to die for!  So much that I went home and made the pasta salad as a side dish for dinner!  I will share what she made, give you tips, and what I wore (cause being stylish and being able to stuff yourself are important - lol)

Wow - Medical Day Spa of Chapel Hill is so awesome!  They brought in Sheri Castle to teach a summer time menu and then we got to eat!  So fun.  Here are some tips she gave and a recipe I totally loved.

1. Don't spend your time on the whole meal.  Focus on the finishing touches.  Which means go ahead and purchase your grilled chicken already cooked.  Whole Foods grills chicken and vegetables daily in the AM and it's only $1.50lb.  Wow!
2. Hard Boiled Eggs - forget what you thought you knew about making these!  Take a skillet, put your eggs in a single row so each is touching the bottom, fill with cold water, bring to boil, remove from heat and cover for 10min.  The cooking will happen in the hot water.  When you cut into your egg if it has a green ring around the yoke it is over cooked.
3. When making a pasta salad, once the pasta is cooked cover it with your dressing.  The pasta will absorb the seasoning while it's hot and still cooking. (I have found this to be true when I make pasta salads).
4. [This one I tried and LOVE] Take sour cream and "raw" sugar.  Mix them together and use as topping on desert!  It takes amazing and you would Never know it's sour cream!!
5. Go to a Hispanic or Asian grocery store and purchase a Hibiscus flower.  This is the only way to get good tasting strong tea!  Add some ginger, finely chopped and 1 cup sugar or honey, then top off with fresh lime juice.  Trust me this is so tasty!  Add some Champagne for a little something extra.  YUM!

Lemony Deviled Eggs
(aka party in your mouth)
1 dozen large eggs, preferably about 2 weeks old (eggs in grocery store are about 1 week old)
1/2 cup mayonnaise
4 tablespoons butter, at room temp
2 teaspoons fresh lemon juice
1 teaspoon finely grated fresh lemon zest [my suggestions purchase a lemon for both juice and zest]
1/4 teaspoon dry mustard
Salt and freshly ground black pepper, to taste
Paprika, for sprinkling (or she used OldBay, so good!)

1. Place the egg in large pan and cover with cold water.  Bring to a boil, cover, turn off heat and let sit for 10min.  Pour off hot water.  Gently shake pan to crack egg shells. Submerge eggs in ice water and let stand 5 minutes.  Peel eggs. (you shouldn't have a green rim around yoke, if you do try again these are over cooked).
2. Cut eggs in half lengthwise (start at fatter end).  Remove the yolks and rub them through a fine-mesh strainer into a bowl.
3. Add mayonnaise and butter; mix until smooth.  Stir in lemon juice, zest, and mustard.
4. Season to taste with salt and pepper; be a little bold here as the flavors dull slightly when the eggs are chilled.
5. Fill the egg whites, sprinkle with paprika (or OldBay), and chill until ready to serve.
